Paleo Shepherds Pie

A great meal for the week, especially post workout, keep it in the fridge and have some everyday.
  • 500g Lean Mince Beef
  • One Onion Chopped
  • One Butternut Squash Chopped
  • One Cauliflower Chopped
  • Organic Grass fed butter
  • Beef Stock 
  • 3 Carrots Chopped.

  1. Fry mince and onions in a knob of organic butter until browned
  2. Whilst mince is frying start boiling up your chopped butternut squash and cauliflower until it is soft (about 20 mins)
  3. Add Beef Stock cubes (about 2) to your mince, the chopped carrots and half a pint of water and allow to simmer.
  4. Drain the water from your cauliflower and butternut squash and mash together, add two knobs of butter to taste.
  5. In a baking dish first pour in the mince evenly, then layer on the mash on top, put a few small knobs of butter on top to allow the vegetables to become crisp.
  6. Cook in oven at 170 degrees for 20 mins.
