Beef and chorizo meatballs

Beef and chorizo meatballs with roasted pepper sauce and butternut squash

Meatballs
500g lean mince beef
200g chorizo, finely chopped
1 garlic, minced
½ onion, grated
2 tbsp parsley, finely chopped
1 tbsp Paprika​

Sauce
4 Red peppers, deseeded and halved
6 tomatoes, halved
2 garlic, whole
Salt and pepper
Olive oil

Butternut Squash
1 whole butternut squash, cut lengthways and seeds removed
Salt and pepper to taste
Olive oil

  1. Preheat oven to 180 degrees.  Mix the meatballs ingredients and form small meatballs.  Make sure they're compact or they won't hold.
  2. Lightly fry the meatballs in a pan, then transfer to the oven for 15 minutes
  3. To make the sauce, roast the red peppers, garlic and tomatoes for 45mins.  
  4. Slice the butternut squash lengthways and removed all the seeds, season, drizzle with olive oil and roast for 45mins.  
  5. When the peppers, garlic and tomatoes are roasted, place them in a blender (or use a hand blender) to make the sauce.
  6.  Combine the meatballs and the sauce, ensure they are all coated.  Serve in the butternut squash with optional cheese and salad.
